My girlfriends over protective parents are tearing us apart. Help?

You could write her a nice e-mail or go over to the house and talk to her face to face. Just tell her that you just wanted her to know that you care a lot about her daughter and that you are a good kid with a good family and that you wouldn't even think of anything happening that shouldn't. Just try and let her see you care enough to go out of your way not only to try and ease her mind, but because you want to have a friendly relationship with them ( her parents). I think that would mean a lot to her and her husband. It will show you are a kind respectful kid.
